The main distinguishing feature of cables are the types of ends they are soldered with. You will find either a pear nipple or barrel nipple ended cable used for braking.
Of course there is an exception to every rule and in the case of rod or roller lever brakes, the cables themselves will never need replacing (but can be tensioned) due to the fact that they are made of rods of metal as seen below:
